What is Hollandaise Sauce?
A simple combination of egg yolks, lemon, a dash of cayenne, and lots of clarified butter, Hollandaise is beloved for its luxurious silken texture. Contrary to its rather misleading moniker, Hollandaise does not hail from the province of tulips but rather from the home of so many of our favorite mother sauces: France. Originally known as Sauce Isigny, it was named after that region in France so famed for its butter and cream. Looking for it under its original name, food historians can trace Isigny to the beginning of the 19th century. While not originally a member of the fab four mother sauces created by legendary chef Marie-Antoine Carême, it was later inducted into their delicious society as an honorary member by the esteemed culinary writer and chef Georges Auguste Escoffier.
