What’s the Difference Between Jam and Jelly?

Jelly, jam, preserves, and marmalades, sure they all taste great on toast but what’s the difference between these tantalizing spreads? While each of these condiments start with the same base ingredients (fruit, sugar, heat, and sometimes pectin depending on the fruit in question) that is where the major similarities end.


-Jelly is the firmest and most gelatinous, texture-wise. Made of just the juice of the fruit everything else is strained out before it cools and sets, making it the clearest of all the condiments in question and giving it a jewel like quality.

-Jams in turn is made of a combination of fruit puree and actual fruit pieces. It has a looser consistency punctuated by chunks of real fruit.

-Preserves are the most fruit dense of them all and generally have quite a lot of either whole are large fruit pieces.

-Finally marmalade is made exclusively of citrus (grapefruit, orange, etc) and contains not just the flesh of the fruit but also the rind and pith, giving it a wonderful diversity of texture and complex bitter notes of flavor.
