The smallest of the four Caspian Sturgeon, the Sevruga likewise, yields the smallest roe. Each well-formed egg offers a firm texture and a pronounced “pop” on the tongue. Prepared using the Malossol technique, this traditional Russian processing method requires adding 3-5% pure sea salt.
