How is Vinegar Made?
A condiment and a preservative, vinegar has been a useful ingredient in the pantry of mankind since the beginning of civilization. Created using a simple two-step method the process begins with some sugar-containing source (like fruit or wine,) which is allowed to ferment. During fermentation, the aforementioned sugars are broken down in the absence of oxygen and transformed by yeast (wild or commercial) into alcohol and carbon dioxide. The second stage starts with the reintroduction of oxygen, which enables bacteria to produce amino acids and eventually become acetic acid, or what we know and love as vinegar.
