Beginning in 1911, Callebaut chocolate, started in the small Belgian town of Weize. It’s founder Octaaf Callebaut, grew up in a family of brewers, but his interest lay in chocolate rather than beer. Experimenting for months alone in the basement of his grandfather’s business, Octaaf worked to perfect his chocolate recipe. Eventually, he came up with a combination so deliciously balanced that it is still used today. Spawning from this one recipe, an empire was born, and so began one of the finest chocolate companies in history. Ever since those first months in Belgium, Callebaut has prided itself on producing only the finest cocoa products. Sourcing, roasting, and making all their chocolate, every step is carefully executed with an attention to detail that remains unparalleled. At the forefront of chocolate production for over a century, Callebaut is credited with creating the first chocolate callets (chocolate made in small, uniform shapes similar to chips, but of extremely high quality). These callets were a breakthrough in the world of chocolate, enabling chefs to melt, seed, and temper chocolate with an accuracy that had not been conceivable before. Today, Callebaut continues to innovate, creating delicious chocolates in a wonderful variety of flavors and textures and fostering the creativity of chefs all over the world.
