Hackleback Caviar
One of the most popular and delicious forms of caviar, Hackleback roe is positively bursting with flavor! Native to the river basins of Mississippi and Missouri, Hackleback has become a popular alternative to traditional Sturgeon caviar. A conventionally small fish, Hackleback yields a petit jet black caviar. Boasting a delicate combination of nutty buttery flavors and full creamy texture, Hackleback is positively delightful! We recommend serving it classically on lightly buttered toast points or atop blini with a dollop of creme fraiche.

With its approachable flavor and refined texture, Hackleback has become a highly regarded alternative form of caviar, utilized by chefs and foodies around the world. Its delicate orbs are certainly attractive and make for a dramatic, high-contrast presentation. For such a seemingly simple food, there is a definite art to serving caviar properly. Though these rules may seem fussy to the untrained eater, if followed, they will open up the flavors intrinsic to good caviar and allow you to truly taste all the complex nuances of this luxurious food. Oxidation is caviar’s number one enemy. While an unopened can of caviar may be easily kept in the coldest part of the refrigerator for 4-6 weeks, once opened, you must consume it within three days. With that in mind, we always recommend buying small tins to ensure that you will use what you purchase, preferably the day it’s opened. The slight cost difference is money well spent as the quality will not be jeopardized. To serve, pull your caviar out roughly 5-10 minutes before service. Traditionally served in a two-piece service set consisting of a small bowl for the caviar, which rests on a larger bottom filled with shaved ice. Serving it in this manner keeps your caviar at an optimal temperature throughout the entire eating experience. Be sure to serve with mother of pearl spoons as any contact with metal can detract from the caviar’s true flavor on the palate.
