Since antiquity, Spaniards have produced some of the finest hams in the world. Written documentation, dating back to the Roman empire, depicts ancient hams made in much the same way they’re made today! Traditionally, these fresh hams were produced in the arid Sierra Nevada range. The mountain, or serrano climate, was favored for its slow even curing of the meat. As the weather cooled during the first weeks of November, Spaniards prepared their pigs for slaughter. Washed and hung in curing sheds, the mountain air helped to dry and season the meat. Originally all Spanish Serrano ham was made from the highly-revered Iberico pigs. Today, however, mostly Duroc and Landrace pigs are used instead. Growing and reproducing faster than the traditional breed, they produce a tempting alternative to the original. Switching out old mountain sheds for temperature-controlled drying rooms, Serrano ham is made in a much more advanced and consistent way than it once was.
