Pancetta is often referred to as the Italian cousin of American bacon and is often used interchangeably with it, however, the two are very different products boasting flavors and textures all their own. Pancetta is typically taken from the belly of the hog and is then seasoned with a traditional blend of warming spices featuring ground black pepper, cinnamon, cloves, and nutmeg. Left to cure for months, this entire process is done specifically to intensify those delicious umami flavors already intrinsic to pork. Once successfully cured, the Pancetta is then rolled into a log before it is sliced into paper-thin slivers, that show off the meat's signature swirl.
