Unless you’re cooking the tale, in which case much like the shank of a lamb or cow, it needs prolonged slow braising. Though its history is long the popularity of kangaroo has been overshadowed by more common forms of meat like sheep. Even among native Aussies, more than 50% report they’ve never actually tried it. In recent years, however, the kangaroo is making a comeback. More and more restaurants are now featuring this delightful meat on their menu.
