The pork skirt, also known as secreto (or secret cut), is snugly situated between the stomach fat and the ribs. Thanks to its hidden location, pork skirt is a thin layer of meat so small it’s easy to miss. Though petite in size, this is easily one of the tenderest portions on the hog because it’s not a heavily used muscle. Pork shoulder steaks are a hard-to-find cut of meat, but well worth the search. Pork shoulder or Butt, as it is counterintuitively named, is great for barbecue, braising, and when sliced down, make terrific steaks. The savory richness of a good piece of pork takes little more than some salt and pepper to render fabulous results. Try preparing pork shoulder in the oven with a handful of hearty herbs like rosemary to transform it into a first-class roast. Braised in a flavorful sauce until it’s fall-apart tender or barbecued and shredded, the possibilities are virtually endless.
