When it comes to pork ribs there are two contenders vying for the crown: baby back and St Louis style ribs. Each of these cuts has their drawbacks and their advantages, knowing what they are will greatly help you determine which is the right cut for you. Taken from where the ribs meet the spine, baby back ribs are made after the pork loin has been removed. The upper section is what we know as the baby back while the lower, and larger, are known as the spare ribs. Named for their diminutive size rather than the age of the animal baby back ribs do not come from piglets. These are excellent barbecued low and slow or smoked until fall-off-the-bone tender. The Louis style ribs are conversely taken from the belly of the pig and boast a more generous portion of both meat and fat. Flatter than the curved babies, they’re easier to brown in a pan or skillet prior to cooking. Extra flavorful thanks to all that extra fat, this cut is exceptionally good when prepared in the oven, try slow roasting or braising for truly scrumptious results.
