The unmistakable pungent flavors and aromas of a true stinky cheese make it the darling of the cheese gourmand. Not for the faint of heart, stinky cheese boasts powerful savors and a rich tang that goes well with off-dry white wines and ripe fruity reds. While many kinds of cheese would be considered “stinky” most true stinky cheeses fall into the “wash-rind” category. Put simply, these are cheeses that ripen from the outside in, rather than the inside out. As the cheeses mature, they are frequently washed in a brine that helps promote the growth of good bacteria and inhibit mold growth. These bacteria are responsible for the beautiful pinkish-orange color that develops on many stinky kinds of cheese. Along with those pretty colors, the bacteria are also responsible for a lot of the aromas we associate with stinky cheese. That’s why most of these cheeses are actually milder than their smell would indicate. Once tasted, stinky cheese is often characterized as being somewhat mild with mushroomy, fruity, grassy, or nutty notes.
