While there are hundreds of truffle varietals, there are only three black truffles that rise to the level of luxury quality we associate with fine dining: the black winter truffle, Burgundy truffle, and of course, the summer truffle. The black winter truffle is found throughout Europe and boasts a dark finely-veined flesh that is so black it almost appears purple. With the strongest flavor profile of all the black truffles, it is characterized by notes of cocoa, earth, and bitter tannins. The Burgundy truffle is lighter in color, with small diamond-shaped protrusions all over its rough skin. With a more nuanced aroma and taste than the winter variety, it has definite notes of caramel and musk. The summer truffle is at the other end of the spectrum in terms of taste, with a mild relatively light flavor profile it has distinct notes of hazelnut and caramelized cream. Coal-black on the outside the summer truffle’s interior ranges in hue from grey to cream.
