What are Porcini Mushrooms?
Brown-capped with thick white stalks, the porcini is the mushroom idealized. Though they can grow to nearly a foot in size, porcinis are usually harvested when no larger than a few inches. Boasting a perfected appearance, a delightfully complex flavor, and requiring little to no preparation, it’s no wonder that the porcini mushroom is a favorite among chefs and gourmands around the globe.
How to Cook Porcini Mushrooms
While preparing porcini mushrooms is a fairly straightforward process, there are a couple of things to keep in mind to get the most out of them. Avoid water in conjunction with porcinis. While some mushrooms like Morels demand a good soaking (or several) before they're ready to use, porcini do best when kept away from moisture. Excess water will cause the delicate mushrooms to deteriorate before cooking. The best way to clean them is by simply wiping them off with a damp cloth to rid them of any contaminants. If using dehydrated mushrooms reanimate them by steeping in hot water for 20-30 minutes until they have plumped up then use as you would their fresh counterpart. A bonus of using dried mushrooms is broth you’re left with after hydrating them. It is filled with all those same complex flavors and makes a great addition to any recipe adding another layer of rich umami taste.
