Reconstituting Dried Mushrooms
To prepare dried mushrooms for cooking, simply cover them with simmering water and allow them to steep until they have absorbed the liquid and become plump and yielding once again, this takes approximately 20-30 minutes. Because dried mushrooms float to the surface of the water, we like to reconstitute them in a french press. Using the press to keep them submerged, helps squeeze out any excess moisture, and finally, makes pouring out the leftover mushroom broth through its built-in filter easy. If you don't have a french press available, simply use a bowl. A well-placed plate on top does an excellent job of keeping the mushrooms fully submerged.
Using Mushroom Broth
The mushroom broth that remains after reconstituting your dried mushrooms is an excellent ingredient unto itself, with a wide range of culinary possibilities. We like to reduce this liquid by ½-⅔ to concentrate its flavors, at which point it can be transferred to an airtight container and kept in the refrigerator for months, or frozen indefinitely. A great addition to any number of dishes, we love to use it in place of water in recipes like risotto or add it to our pasta for an extra layer of flavor. Mix it into stocks, sauces, and soups for an earthy element in your cooking. In short, any recipe that calls for water or broth can be replaced in part or in whole, with this delicious liquid.
