White Truffles

Truffles, one of the most luxurious foods known to man, it shows up on lists alongside caviar and foie gras. Admired for their uniquely delicious and complex flavor truffles come in several varieties. These can be broken down into colors: black, white, and burgundy. Within those groupings, there are hundreds of varietals based on geographic location, flavor, growth patterns, and more. The white truffle, with its golden color and almost spongy consistency, has a pleasant aroma that gives way to a deep and intensely musky flavor. Growing wild among the Piedmontese forests of Alba, truffles are most commonly found around the roots of trees, just a few inches below the surface of the soil. Because of the nature of their growth, truffles are a difficult thing to find even to those who are trained in the art of hunting them. Growing especially large near hardwoods, like oak, poplar, and linden trees, the truffles are found with the aid of trained dogs, who thanks to their heightened sense of smell, can pick up their scent and point them out. With a long tradition and a truly delicious taste, truffles are one of those foods we simply can’t get enough of. Delicious enjoyed in a number of ways, our favorite preparation is to simply shave them thinly over recipes, their singular taste-enhancing anything from pasta and risotto, to eggs and meats.
