Now one of the world’s leading snacks jerky has a long history. Like so many foods, jerky was born out of necessity. In the days before refrigeration, the drying of meat was a great way to extend the summer weeks of plenty, making the scarcities of winter less trying for ancient civilizations. It also served as great food for travel, light-weight, nutrient-dense, and with an untouchable shelf-life, jerky was the ideal food for long exploratory treks into the unknown. The origins of jerky can be traced back to the ancient Aztec empire, where instead of beef, you were more likely to find dried llama and alpaca jerkies. Originally called “ch’arki,” it was made from lean slices of meat that had been cleaned of fat and cut into narrow strips. The pieces were then pounded thin, rubbed generously with salt, and air-cured or smoked until completely dry. The Spanish conquistadors realized the virtues of this ingenious method of preparation and brought it back to Spain and Portugal on subsequent return journeys. Jerky was also popular among the native tribes of North America, where buffalo, deer, or elk, were used. Throughout the generations, jerky became more sophisticated as spices, flavors, and new techniques were utilized. Today, it’s one of the most popular snacks in the world, boasting bold flavor and a healthy profile.
