This title is not an indication of the breed but rather one of quality, consistency, and an exacting standard that sets this amazing meat apart. Cervena elk must be slaughtered while still under three years of age to ensure the meat is still meltingly tender and mild in taste. Sourced from Wapiti elk, this name is a Native American term, meaning ‘White rump” and refers to the hybrid cross between the Roosevelt, or American Elk, and the New Zealand Red Deer.
