Osso Bucco is a traditional Italian dish, first created with veal shanks in mind, however, its delightful results have inspired countless renditions using every meat imaginable. We prefer venison for its bold meaty taste and its more complex flavor profile. Thanks to the fact that the shank is one of the more intensely used muscles on the deer’s body, it’s tough and lean, but it’s by far the most flavorful. To skirt around the issue of texture, our favorite method of preparation for the shank or Osso Bucco is long, slow braising. This moist cooking method keeps the venison juicy and helps to break down any tough bits, transforming the entire portion into a dish that tastes expensive but is one of the most affordable! Like most braises, this recipe tastes even better the next day. This gives the flavors extra time to meld together and fully integrate. Whether you’re creating Osso Bucco in the classic way or taking a more creative approach, look to big game meats, like deer and elk, for more intense flavors and larger portions. If size is of great importance, notice that we have our shanks broken down into fore and hind options.
