What is Hard Cheese?

So what is hard cheese exactly, and how is it different from any other cheese? Thanks to a process that rids the cheese almost entirely of moisture through extreme pressure and a long aging process intense umami flavors develop, along with a crumbly firm texture. As they age they not only intensify in flavor but they also develop natural salt crystals, adding a pleasing crunch and a wonderful diversity of texture.


Don’t Toss Those Cheese Rinds!

No need for a coating of wax or cloth exterior, these cheeses age for such a long period that they develop their own rind. This hard exterior is where the flavors become even more intense. Though rather too tough to be eaten enjoyably, the rind is an amazing flavoring agent that can be added to all manner of dishes like soups, stews, and sauces, adding a rich decadent flavor.
